Ingredients

200g multiflori, 500g radix angelice sinensis,
and proper amount of rice wine, soy, ginger and shallot.

onion 20g, beef 200g, Huaishanyao (akind of
Chinese yam) 50g.

500g tortoise, 10g ginseng, 20g astragali
seu hedysari, 20g fructus lycil and a small amount of flos carthami.

Preparation procedure
|
Extracting the jiuice of radix angelicae sinensis
and multiflori by boiling in water, putting pig liver into boiling
water kettle and adding the above extract, cooking wine, ginger and
shallot, boiling till the liver is hard and well-done, air-drying,
slicing, and finally tray loading. |
Slicing onion, steaming Huaishanyao, salting
beef, thoroughly mixing, putting oil and ingredients into pan, adding
condiments, frying, and finally tray loading. |
Killing and washing the tortoise, putting
into boiling water, washing with clean water, and then simmering the
tortoise with the above Chinese Traditional Medicines for 2 hours,
and finally adding condiments. |

Ingredients
|
one fish, 5g flos carthami, 15g multiflori,
100g tomato juice and a small amount of white sugar. |
fresh lotus seed, western celery, asparagus,
cowpea, sword been, each 50g, together with a small amount of lycium
barbarum, semen armeniacae amarum, and Miren (rice kernel). |
one crab, 2 pieces of marinated egg yellow,
10g fructus lycil and a small amount of flos carthami. |

Preparation procedure
|
Separately boiling flos carthami and multiflori
in water and collecting their concentrated humor; washing and cutting
the fish into 2 pieces, slicing the fish pieceinto 10fillets, soaking
the fish fillets for a moment with some of the above humor added with
salt, gourmet powder and wine;adding starch on the soaked fillets
and frying them in a hot oil pot (heated to 60% of its maximum temperature)
till being shaped and then removing from the pot, after restoring
of oil temperature, re-frying the fillets till being exterior crisp
and interior tender and loading them in tray; thoroughly frying the
tomato juice and the remanding concentrated humor, sugar and gray,
and finally pouring them to the just fried fish fillets. |
Putting fresh lotus seed, western celery,
asparagus, cowpea, sword bean, fructus lycil, semen armeniacae amarum,
and rice kernel into pan, frying,adding condiments and gravy, and
tray loading. |
Putting starch and oil in pan and slightly
frying the crab, removing cab form pan, mixing with marinated egg
yellow and refrying, adding flos carthami, fructus lycii and condiments,
and finally tray loading. |
